Easy Peasy – Vegetarian Pizzas

Olive & Mushroom Vegetarian Pizza No. 1 (makes 1 medium sized pizza)

Pizza Vegetarian Olives and Mushrooms

Ingredients:

Thin & Crispy Medium 9 inch Coles brand pizza base
olive oil
basil pesto
crushed garlic
baby spinach (handful)
sliced black olives
whole pitted Kalamata olives
sun dried tomatoes
mushrooms (handful)
dried Italian herbs
Perfect Italiano brand “Pizza Plus” grated cheese blend (Mozzarella, Cheddar & Parmesan)

Method:

  1. Spread 3-4 teaspoons of olive oil onto pizza base.
  2. Spread 1 teaspoon of basil pesto onto pizza base.
  3. Spread 1 teaspoon of garlic (crushed) onto pizza base.
  4. Add baby spinach, olives, sun dried tomatoes, sliced mushrooms onto pizza base.
  5. Sprinkle Pizza Plus grated cheese blend over pizza.
  6. Sprinkle some dried Italian herbs on top of cheese.
  7. Bake in preheated 180 degrees’ oven until cooked (approx. 20mins until desired crispness) Pizza base packet directions suggested a higher temperature, however I used lower temperature so that the pizza cooked slower and more evenly.

 

Pumpkin and Fetta Vegetarian Pizza No. 2 (makes 1 medium sized pizza)

Pizza Vegetarian Pumpkin and Fetta

Ingredients: * (Fetta aka Feta)

Thin & Crispy Medium 9 inch Coles brand pizza base
olive oil
basil pesto
crushed garlic
butternut pumpkin ½ of a whole, cut into small cubes (boiled first in microwave for approx. 15-20 mins until almost cooked)
red onion ½, sliced
danish fetta (small block from Deli section of supermarket) cut/crumbled
rocket (handful)
fresh basil (6 sprigs)
pine nuts (sprinkle)
dried parsley
Perfect Italiano brand “Pizza Plus” grated cheese blend (Mozzarella, Cheddar & Parmesan)

Method:

  1. Cook pumpkin in microwave first. (could roast in oven if preferred)
  2. Spread 3-4 teaspoons of olive oil onto pizza base.
  3. Spread 1 teaspoon of basil pesto onto pizza base.
  4. Spread 1 teaspoon of garlic (crushed) onto pizza base.
  5. Drain pumpkin in strainer/colander to remove water.
  6. Add pumpkin cubes, red onion, feta, rocket, basil and pine nuts onto pizza base.
  7. Sprinkle Pizza Plus grated cheese blend over pizza.
  8. Sprinkle some dried parsley on top of cheese.
  9. Bake in preheated 180 degrees’ oven until cooked (approx. 20mins until desired crispness) Pizza base packet directions suggested a higher temperature, however I used lower temperature so that the pizza cooked slower and more evenly.
